What's the one thing people forget when planning a party?
"When people have dinner parties, they forget that hot food needs to be hot and cold food needs to be cold."
- To keep it cold: "Let's say you have something simple like an onion dip. The way to keep it cold is to have two onion dips--keep one in the fridge and one on the table, and rotate them every hour."
- To keep it hot: Roblé recommends the same rotation technique, or cook the dish in a ceramic pot, which retains heat well.
