Try this feel-good, taste-good Earth Day recipe.
We already recycle and have been spotted giving the occasional tree a hug. So this year, we're celebrating Earth Day a little differently...by eating.
When we got word that Kimpton hotels, known for their better-for-you, better-for-the-earth practices, are celebrating Earth Week with locally-sourced, organic restaurant menu additions, we wanted a taste. So we asked them to dish out the recipe.
NIOS restaurant's Exec Chef Massimo De Francesca (see the man and his food here) is serving up a special NY Market Vegetable Salad available through tonight.
