We love the monster chocolate chip cookie.

Try a dessert from Brooklyn's new vegan power player.

We knew we were in for a treat when we walked into Champs Family Bakery.

The just-opened 100% vegan Brooklyn bakery is owned by Megan Blackburn and Brad Baker of vegan café Boneshakers. While the décor is still a work in progress, the menu boasts scrumptious cookies, pies, cupcakes, scones and muffins (we like the protein-packed, quinoa-based "Superman" muffin), and 85% of the ingredients are organic. Flaky vegan croissants will be added soon.

Freshly-baked strawberry Danishes tempted us, but Champs' monster cookie sandwich (pictured) proved irresistible. Its chewy chocolate chip cookies and rich peanut butter filling were so delicious we forgot they were vegan. Grab the recipe for Champs' rocky road vegan cookies here.

Blackburn shared that she started her day with the chocolate oatmeal fudge cookie.

Now, that's a breakfast of champs.
