Strawberry Chamomile Cocktail
1 shot of St. Germain or vodka (optional)
1 pint of strawberries
½ cup water
1 tbsp agave nectar
¼ - ½ cup brewed chamomile tea, chilled
Splash of club soda
Juice of one lemon wedge
Remove strawberry stems and roughly chop strawberries. Place strawberries, water and agave in a small saucepan. Bring to a boil and simmer over low heat 15 minutes. Allow to cool before proceeding. Mixture can be refrigerated and stored for two to three days.
Fill highball glass or mason jar with ice. Add St Germain or vodka (if using), 3 tablespoons of strawberry mixture (include strawberries) and ¼ - ½ cup of tea (depending on taste) and stir vigorously. Top with splash of club soda and lemon juice. Garnish with fresh chamomile flowers.
