Salmon Salad with Fresh Fruit Salsa
Serves 2
2 6-oz. pieces wild Alaskan salmon
organic light Italian dressing (such as Newman's Own)
dried basil
Vital Choice Organic Salmon Marinade (a salt-free seasoning mix)
1 c. pineapple chunks, fresh or frozen
1 c. mango, fresh or frozen
1 organic apple, diced
1 c. organic bell peppers, chopped
½ c. organic celery, chopped
½ c. parsley, chopped fine
4 Tbs. lime juice
2 tsp. honey
salt and pepper to taste
organic mixed salad greens
pine nuts
balsamic vinegar
Heat the oven to 325ºF. Place salmon on a baking dish and drizzle with salad dressing. Sprinkle with basil and salmon marinade. Cook about 25-30 minutes or until the salmon flakes easily with a fork.
While the salmon is cooking, combine the pineapple, mango, apple, bell peppers, celery, parsley, lime juice, honey and salt and pepper in a large mixing bowl. Toss to combine.
On two plates, distribute salad greens and sprinkle with pine nuts. Top with the salmon and salsa. Drizzle with balsamic vinegar to taste and serve immediately.
