Almond Butter and Banana Stuffed French Toast
For French toast:
2 slices spelt bread
1 Tbs. all-natural almond butter
1 banana
2 eggs
3 Tbs. almond milk
1/8 tsp. cinnamon
1/8 tsp. nutmeg
Dash ground cloves
1 tsp. vanilla
1/2 tsp. wheat germ
1/2 tsp. chia seeds
For the pumpkin sauce:
1/4 c. plain Greek yogurt
1/8 c. pumpkin purée
1/8 tsp. cinnamon
1/8 tso. nutmeg
2 tsp. maple syrup
1 tsp. chia seeds
Make French toast: Cut bread into heart shape (a cookie cutter might be useful). Spread 1 tsp. almond butter on one side of each piece of bread and arrange your banana slices on one side. Sandwich together and poke a few times with a fork.
Whisk together eggs, milk, spices, vanilla, and wheat germ. Place sandwich in mixture and begin preheating a non-stick pan sprayed with cooking spray over medium heat. Allow sandwich to soak in egg mixture one minute before flipping, poking both sides again with your fork. Sprinkle chia seeds over bread and cook until golden on both sides.
Make sauce: Stir sauce ingredients together; place on plate with French toast, along with remaining banana and almond butter.
