Think healthy raw dining means hours in the kitchen? Think again.
Ask raw Eco Chef Bryan Au, and he’ll say creating a delicious raw dish is as easy as icing a cupcake...a quick and easy raw chocolate cupcake, that is. He should know, since he's written the book: Raw STAR Recipes: Organic Meals, Snacks, & Desserts in 10 Minutes.
The book, which is almost devoid of kitchen appliances, is made to be doable for anyone. "It is all designed to be fun, fast, simple and delicious," says Au, who considers the dishes "truly healthy fast food and instant meals."
That doesn’t mean subsisting on salads. Go raw Au’s style, and you won’t give up anything. You can make raw coconut cupcakes, cinnamon donuts, and chocolate cake on the quick by mastering a single, simple recipe of Au’s--that can be tweaked to create an even bigger variety of raw delights.
The secret ingredient? Coconut nectar, a healthy sweetener Au swears by. The sweet stuff’s available at some Whole Foods stores, but in a pinch, Bryan recommends subbing in raw organic honey.
