Whole Wheat Chocolate Chip Banana Bread
1/2 c. unsalted butter
1/2 c. packed light or dark brown sugar
3/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 tsp. vanilla extreact
3-4 mashed, very ripe bananas
1/4 c. honey
2 large eggs
2 c. whole wheat flour
Chocolate chips (as much as you want)
Preheat the oven to 350 F. Grease a 9x5 loaf pan.
Beat together butter, sugar, baking soda, salt, cinnamon, nutmeg and vanilla. Add banana, honey and eggs and beat until smooth. Add flour, then stir in chocolate chips. Pour the batter into the prepared pan and let it rest at room temperature for about 10 minutes.
Bake for 1 hour, or until it passes the toothpick test. Remove from the oven and let cool; turn it out of the pan and cool on a rack.
