Peachy Frozen Yogurt

3 cups frozen peaches or nectarines, partially thawed
2 cartons (16 ounces each) low-fat vanilla yogurt
1/4 cup honey

Place 1 1/2 cups of the peaches in a food processor with the yogurt and honey. Process until smooth. Finely chop the remaining peaches and stir into the yogurt mixture. Pour into a 2-quart pan. Cover and freeze for 4 hours, or until firm.

Break the frozen mixture into small pieces and place in the food processor. Pulse until fluffy. Return the mixture to the pan and freeze, covered, for 6 hours or until firm.

Let the frozen yogurt stand at room temperature for 15 minutes before serving.
