Julie's Banana Blueberry Muffins
3 ripe bananas
1/4 cup coconut oil
2/3 cup date sugar
2 cups oat flour
1 tsp. salt
1 tsp. baking soda
Approx. 60 blueberries
Mash bananas. Add oil and date sugar. Mix well. Blend/sift flour salt and baking soda together and add to banana mixture. Mix until flour is blended in (DO NOT BEAT). Pour into muffin cups or bread pan. Place 4-5 blueberries on top of each muffin and indent into batter. Bake at 360 degrees for 12-20 minutes or until a toothpick comes out clean.
Optional: Add walnuts, pecans, raisins and/or coconut.
