Cleansing Raw Kale Salad with Avocado and Goji Berries
1 small bunch of kale (Lacinato variety preferred)
1/2 avocado, cubed
1 Tbsp. goji berries
Juice of 1 lemon
2 Tbsp. olive oil
1/4 tsp. sea salt
Chiffonade the kale (cut into very thin strips) and place in a medium mixing bowl. Place goji berries and avocado on top. Squeeze lemon over mixture and add olive oil and salt. Using clean hands, gently "massage" the salad to mix ingredients. Taste, and adjust seasoning to taste.
The lemon juice "cooks" the greens, so for best results, allow the greens to marinate for a few hours before enjoying.
