Happy Healthidays Recipe: Green Tea Loaf

Makes 8 (1"-thick) servings

1 ¼ c. whole grain pastry flour
½ c. turbinado sugar
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
½ tsp. ground cloves
1 tsp. ground cinnamon
2 egg whites
½ c. fat-free plain yogurt
¼ c. steeped green tea, cooled to room temperature
¼ c. safflower or canola oil
1 tsp. vanilla extract
3/4 c. chopped walnuts

Heat oven to 350°F. Coat 8" loaf pan with canola oil cooking spray. Combine flour, sugar, baking powder, baking soda, salt, cloves, and cinnamon in large bowl. In a small bowl, whisk egg whites, yogurt, green tea, oil, and vanilla extract until just combined. Make a well in center of flour mixture and add egg white mixture. Mix until well combined; evenly fold in walnuts.

Pour batter into prepared loaf pan. Bake 40 to 45 minutes on middle rack in oven or until knife inserted in center comes out clean.
