Broiled Pears with Maple Vanilla Walnuts and Cranberries
Makes 6 servings (1/2 pear each)
3 pears, halved
3/4 c. walnuts, chopped
3 Tbs. maple syrup
1/2 tsp. vanilla extract
1/4 c. dried cranberries
Salt to taste
Heat broiler. With a melon baller, scoop seeds from pear. Place pear halves flesh-side down on cookie sheet and broil for 12-15 minutes, until pears are tender.
Meanwhile, in skillet over medium heat, stir walnuts and maple syrup for 3 minutes, until walnuts are toasted and syrup is reduced. Add vanilla extract, cranberries, and salt; sauté for 1 additional minute.
Fill broiled pear halves with 2-3 Tbs. of walnut mixture. Serve immediately.
