Mini Eggplants with Goat Cheese
6-8 Indian eggplants
salt
5 cloves garlic, minced
3 Tbs. olive oil
1-2 tsp. paprika

Heat oven to 375 degrees. Wash eggplants and cut lengthwise. Salt and let sit for 15 minutes. Meanwhile, prepare a bowl with garlic, olive oil, and paprika. Brush the garlic olive oil onto the open face of the eggplants. Roast in the oven for about 30 minutes, making sure garlic doesn't burn. Once the eggplants are soft, place on a platter and scoop some goat cheese on top. Sprinkle with salt and serve immediately.
