Couscous with Peaches
Serves 4.
16-oz. can sliced peaches, drained and liquid reserveSkim milk, enough to total 2 c. of liquid when combined with peach juice
1 c. quick-cooking couscous
2 Tbs. butter
1/2 tsp. ground nutmeg
2 Tbs. brown sugar, plus more for serving
In a small saucepan, heat reserved peach liquid and milk to simmering. Add couscous, butter, nutmeg and brown sugar to pan; stir to combine.
Remove from heat; let sit until liquid is absorbed, about 5 to 10 minutes.
Spoon into bowls and top with sliced peaches and a dab of brown sugar.
